The Art of Smoking Meats

In this deliscious new class, you will learn the basics of the smoking process for selected meats and seafood, along with many tricks of the trade for this time honored, traditional form of cooking and preserving foods. Through lecture and demonstration, you will participate in such topics as types of wood used in smoking, best cuts of meat to smoke, cold vs hot smoking, types of rubs, popular recipes, where to buy the best spices and other ingredients used in smoking, safety procedures and state regulations. Cooking demonstrations will yield very tasty results. Your instructor, Mike Raven, owner of Grandpa's Smoked Meats in Pittsfield, Maine.
